Because DONUTS

I love cooking, but I don’t particularly like spending a ton of time in the kitchen worrying about a bunch of little steps – particularly with baking.  But, nothing beats home-baked goodies.  This donut recipe makes the best cake donuts ever, and it couldn’t get much easier!  I’ve made these about four times in the past few weeks – perfect for Sunday mornings, easy baking activities with kids, or a quick {and slightly indulgent} midnight snack.

What you’ll need:

donut pan

-boxed cake mix {I love gluten free Funfetti, vanilla, Devil’s Food, lemon, and strawberry}

-1 egg

-1/4 cup vegetable oil

-1 cup water

Preheat oven to 350 degrees.  Whisk the ingredients together until the lumps are mostly gone, transfer the batter into a piping bag or a plastic bag with the end snipped off, and pipe the mix into a greased donut pan {cooking spray works great – I love the coconut stuff from Trader Joe’s}.  One box of cake mix usually makes about 2 dozen donuts.   Bake for 15 minutes.  Remove from oven and let cool, then ice {this is the REALLY fun part!} the donuts.  Melt one tablespoon butter, then mix in 1 1/2 cups of powdered sugar and about 2 tablespoons of milk.  You can tweak this recipe – adding more or less milk as desired.  Less milk will make for thicker, more opaque icing.  Make a few batches of the icing and add food coloring; dip the donuts in, and allow to dry a bit.  Add toppings as desired {I used a mix of cake sprinkles and candy melts}, and enjoy!
