“It’s OK, Guacamole, I’m Extra Too” {Cook}

Back in September, my cousin and I took a road trip to an Ole Miss football game in Mississippi.  I love college football, and Ole Miss is supposed to have the best tailgate experience in the country (according to a bunch of sources), and I now have first hand knowledge that, yes, it does.  But also – that tailgate had the added perk of me meeting this nice, cute guy from Texas, who was also on trip to Ole Miss with some friends because one guy heard they had a really awesome tailgate… and the rest, folks – as they say – is history, and we’ve been doing the long-distance thing ever since.

So, after seeing an “It’s OK guacamole, I’m extra too,” which my sweet now-boyfriend so lovingly sent to me {of course I have NO idea what would make him think of me…}, it’s since become a frequent mention, occasionally accompanied by the theoretical ‘Chipotle catering and a mariachi band’ depending on what level of drama I’ve reached.

Anyway, said BF is originally from New Mexico, and though we cook together a lot now, this simple, but tasty guacamole he made with his family is one of the first things he made for me, right before we officially became a ‘thing.’  After a taste, there was no question that I wanted him to stick around.

What you’ll need:

3-4 Amazing Avocados

1 gorgeous clove minced garlic

3-4 tablespoons of fresh beautifully chopped cilantro

1 teaspoon salt (from your hand like Salt BAE)

1 bright green lime, juiced

2 diced plump Roma tomatoes

-Mix the avocados, garlic, cilantro, salt, and lime juice in a medium-sized bowl, and mash it up to desired consistency

-Add in onion and tomato

-Mix it up, tasting and making adjustments as necessary

Complete your menu with some fresh pico de gallo, which is just as easy to get together:

What you’ll need:

-3-4 Roma Tomatoes, chopped

-1 white onion {I always used a red onion, but the guy at the Mexican food store recommended the white, and it was really good!}

-3 Tablespoons fresh chopped cilantro

-1 Chopped fresh serrano, jalapeno, or habanero peppers

-Salt {more Salt BAE action}

-3 Key limes, juiced

Combine in a medium sized bowl, tasting along the way and adjusting as necessary.

Serve with tortilla chips of your choice, or on hamburgers, in tacos, and pretty much whatever else!  And an extra lime squeeze on that guac just before serving makes it THAT much more DELISH.  Enjoy!
