Cinco de Mayo Pizza

Pizza Friday is back! After making about 50 pizzas last year (and eating pizza for 53 Fridays), I’ve really missed it in 2017!  And so many people have asked about it and said how much they looked forward to the posts, so here we go again.  Fridays are for pizzas, and I look forward to cooking, eating, and sharing what I come up with.

So, first up in this Pizza Friday round celebrates one of my favorites – Cinco de Mayo, which is today! – but, of course, Mexican food is good any day of the year, so don’t feel like you have to wait until next year to whip this up at home.  With tortillas, refried beans, and spicy jalapenos, this pizza highlights some of the best parts of Mexican cuisine.

What you’ll need:

1lb Ground beef

Cumin

Chili Powder

Kosher Salt

Refried Beans

Olives

Taco Sauce

Corn or Flour Tortillas

1tbs. Vegetable Oil

Cheddar Cheese/Colby Jack/Mexican Cheese blend

Heat oven to 425.  In a pan, over medium heat, warm 1 tbs. vegetable oil.  Cook ground beef through, with a shake of cumin and chili powder, and a pinch of salt until it’s no longer pink.  Mix the refried beans into the ground beef, and spread on 4-6 tortillas (depending on size).  Place a second tortilla on top of the bean/beef mixture, and layer on taco sauce, jalapenos, cheese, and olives.  Put in oven for about 10 minutes, or until the cheese starts to bubble.  Remove from oven and add chopped cilantro and lime squeeze.

Slice into fourths, and enjoy!  Keep in mind that these are tacos, so they’ll be a little more flexible than a pizza crust, and that’s why it’s good to keep the slices small!  But tacos + pizza…which is the best of all worlds, so all is good!  Enjoy!!
