This ‘pizza’ definitely wins the prize for the easiest option of this Pizza Friday journey. This is (clearly) a sort-of pizza twist on the ubiquitous avocado toast trend that you really just can’t help but love! I was craving avocado toast, which isn’t as easy as it should be if you’re gluten free. All those yummy, crusty bread options totally look mouth-watering, but they just don’t work for me and the rest of my GF folks. So, saving the day were these GF pizza crusts that I happened to come across in my local grocery store. I was going for something fresh and summery that could serve as a tapas-type appetizer, and this totally hit that mark. Avocado toast ‘pizza’ is perfect for that ‘after the beach cocktail hour’ time, while people are getting showers and dinner is being prepared. Taking advantage of the fresh Jersey produce and some really great feta, there isn’t any cooking necessary (though I did grill the mini pizza rounds) and it all comes together pretty quickly. The recipe (if you can call it that!) is just this: smash up 1 avocado per 2 6 or 7 inch pizzas (use the GF option listed above, or make your own dough!), grill the pizza dough and set aside to let cool a bit before spooning the avocado onto the grilled dough. Top with sliced cherry tomatoes (ideally local, Jersey fresh!), crumbled feta, salt, and pepper…and maybe some hot sauce if you’re feeling extra spicy!
